It's been a whilst since I've blogged. You're probably thinking that I did something insanely spectacular during my absence.
But no. Life has been as normal as a conformist.
However, in a matter of weeks I shall be coming of age, entering my second year of uni and my sister will be moving to a different country.
So whether I like it or not, things are changing.
But what's not changing is my love for breakfasts - especially a parfait. (did you see what I did there? I'll see myself out...)
Ingredients:
Berry Layer:
- 2 cups of frozen berries
- 1/3 cup of H2coco pure coconut water
Banana Layer:
- 2 cups of frozen banana
- 1/2 of one passion fruit
- 1/3 cup of H2coco pure coconut water
Chia pudding:
- 4 tbsp chia seeds
- 1/2 cup of H2coco pure coconut water
Topping (optional):
- passion fruit
- goji berries
- strawberries
Method:
Preparation:
To make berry layer:
- blend all ingredients in a blender/food processor until smooth
To make the banana layer:
- blend all ingredients in a blender/food processor until smooth
To make the chia pudding:
1. Add chia and gradually stir in the coconut water.
2. Leave to sit for 5-10 mins.
To layer:
1. In two jars/glasses add about 2 tbsp of the banana layer, then 2 tbsp of the chia layer and 2 tbsp of the berry layer. Repeat until all the mixtures have been used up.
2. Then add toppings. Enjoy!
