Grilled Pizza
This recipe is a perfect vegan alternative to a pizza and is much easier and healthier too! Unlike the classic pizzas, this uses a wrap base instead of a dough base- this is because wraps are more crunchier and quicker to assemble and it doesn’t use any cheese. But despite these alterations, I still think it’s a delish dish and definitely an easy, simple feed! To make the recipe, it involves using the grill or the sandwich press - mainly because our oven wasn’t working when I created this recipe, so I had to make do with other options, but you could use the oven (just take note, the oven will take less time to cook pizza, so the times on this recipe will be different).
Ingredients:
- tomato paste
- about 8 small mushrooms
- 2 capsicums
- packet of spinach
- walnuts
- 4 wholemeal wraps
1. Chop capsicum and mushroom into thin slices
2. Place capsicum and mushroom on a pan on medium heat and stir until they begin to soften and are slightly browner.
2. Lay out a wholemeal wrap on a flat surface and evenly spread about a tablespoon of tomato paste on the wrap.
3. Top wrap with as much spinach, mushrooms, capsicum, walnuts as you desire.
4. Repeat steps 1-3 with remaining wraps
5. Place wraps in grill/sandwich press and toast until wrap begins to brown slightly. This usually takes about 20 mins. Enjoy!
