Fried Brown Rice
Growing up, rice during meal time was a given. In fact, a non-rice dish was a rarity- there have been countless times where someone would say 'THERE IS NO RICE' and believe me, when this happened, all hell would break loose. There would be mood swings, arguments and absolute chaos. It was like we were different people, simply oblivious and coming to the realisation that we could not eat until more rice was cooked. You know how in primary school you had the 'no hat no play rule', well in my household there was the unwritten 'no rice no food' rule. Technically, there was food but we simply did not eat without the rice. Like, wth, as if we were going to eat rice-less, I mean come on, who does that?!?!...
Because rice was a fundamental component in our diet, naturally we ate lots of rice dishes, one of them being fried rice. My parents hands down made the best fried rice and although I haven't eaten in so long (as they make it with egg and sometimes some form of meat), I decided to make my own fried rice recipe, with a few alterations. I used brown rice (cos ya know, white rice is waaaaaay too mainstream. It's so versatile and a perfect way to help you get your daily dose of veggies! You can add any veggies you have at hand but here's the ingredients I used and how I made it...

Ingredients:
- 3 cobs of corn
- 2 carrots, chopped
- 1/2 onion, diced
- 2 cloves of garlic, diced
- 300g hard tofu, chopped
- 1/2 cup peas
- 1 cup of uncooked brown rice, rinsed and drained
- coconut oil or oil of your choice, for frying
- optional: 2 tbsp soy sauce
Method:
1. To make the brown rice:
Place 2 cups of water and brown rice into a pot and bring to the boil. Once it's boiling, reduce to a simmer and cover, stirring occasionally for about 30 mins or until the rice has increased in size and all the water has been absorbed.
2. To make the corn:
While the rice is cooking, place water (I used about 4 cups) and corn into a pot and bring to the boil and cover. Leave corn in there for about 10-15 mins until cooked, then slice corn off the cob and chop corn into small pieces.
3. Once the rice and corn is cooked, place coconut oil in a pan on medium heat and add onion and garlic, stirring for about a minute until they begin to brown. Then add carrot and stir for about 2 mins. Then add corn, peas, rice, tofu and soy sauce. Stir for a few minutes until it is well combined and the carrots have softened. Enjoy!
