Apple, Data & Cinnamon Oatmeal
As the cold weather continues to make days as gloomy, dreary and cold as possible, the influx of porridge increases. Yeah, I think by now we're much to aware of my ongoing love for oatmeal-rain, hail, shine whatever the weather, I'm always in the mood for some porridge. And to be honest, it's been much too long since I was to share with you all yet another beloved oatmeal recipe. This was created purely spontaneously, out of the blue and was so enriching and delicious! I've recently started to stove cook my porridge instead of using the microwave- I realise that using the microwave can actually zap the nutritional benefits of oats and using the stove makes the oatmeal even more creamier. Ingredients:
- 1 and 3/4 cup almond milk (or whatever milk you have available)
- a generous sprinkle of cinnamon
- 1/4 teaspoon of vanilla bean paste
- 1/2 cup oats
- 2-3 pitted dates, chopped
- 1/2 an apple, chopped
Method:
1. Place oats, almond milk, vanilla bean paste, cinnamon, apple and dates in a pot and turn on heat and bring to the boil.
2. Once it's boiling, reduce heat to a simmer and cover for 8-10 mins stirring occasionally
3. Then take off heat, place in a bowl and top with all of your favorite toppings- I'd definitely recommend fruit, chia, raw nuts or if you have any excess apples/dates you could top off the oatmeal with that. Enjoy!
