Amen to quinoa! Seriously, I have no idea what I would so without it! Definitely one of my most fave super foods, jam-packed with fiber and iron and a heckload of other nutrients, it's one of the most common super grains I constantly use. And when you get quinoa in a salad, its pretty much absolute bliss. I think the best part of making salads is the fact that they're so easy to make and are such a simple way to prepare your meals for the rest of the week, and oh gosh, this dish was a colorful dose of heaven! One of the best things about the winter weather is having comfort food which is so nourishing and just warms up your whole body. As much as I love the summer weather, my fave foods to eat are wintery meals- soups, stews, curries, the list is endless! This soup just filled up my whole body with warmth and was just so delicious! A pilaf also known as 'pilau' is a rice dish cooked in stock usually consisting of meat and vegetables. It's kind of like a risotto but with an Indian or middle Eastern twist. The best part about cooking, is trying food of other cultures and after trying a pilaf a few times, I decided to try and make my own recipe. Sometimes, a good ol' burrito can do no wrong! I'm a big fan of mexican food - nachos, burritos, tacos, the list goes on. But, there is a way to enjoy Mexican food in a much healthier light. So after looking at some burrito recipes online for inspiration, I decided to have a go and make my own vegan burritos. Amen to the inventor of sushi. If sushi weren't in my life, I seriously would be completely lost, blissfully unaware of this concept we call life. You have no idea how joyously over the moon I was when I managed to make sushi- and somehow, it turned out to be success. Sadly, it took me a long time to actually perfect rolling the nori wraps- you would not believe how long it took me, haha! Nonetheless, I finally got it right, and I've decided to share the recipe with all of you lovely people!
