Summer Salad
My favourite season is definitely summer! there are so many things to look forward to during summer - holidays, sunshine and for people like me who live in the southern hemisphere- Christmas! Salads are the perfect summer meal as they're so refreshing and the perfect way to cool down during the warmer months! This is my go-to salad as it's so filling and delicious and keeps me cool during summer!
Ingredients:
- 2 400g cans of mixed beans , rinsed and drained
- 1 avocado
- 1 carrot, grated
- handful of coriander
- 1 teaspoon of paprika
- 1 tomato, diced
- 2 green onions, finely chopped
For the dressing:
- 1 tablespoon of olive oil
- juice of 1/4 of a lemon
- 4 tablespoons of balsamic vinegar
- 2 tablespoons of red wine vinegar
Method:
1. Add carrot, avocado, coriander, tomato, paprika and green onions into a bowl.
2. In another bowl, stir all of the dressing ingredients together until it is well combined.
3. Then add the dressing to the other bowl and stir well. Enjoy!
Optional: if you have time, leave the salad in the fridge for at least an hour before serving.
