Frozen fruit Ice Cream
I found that it was really hard to find vegan ice-cream, so I realised I should make my own. I searched on the internet and found out that there were many recipes for making vegan 'ice cream' and I did try a few of them, but a lot of the recipes were so extensive and had a long ingredient list, so I gathered frozen fruit and came up with the most simplest, minimal ingredient list for an ice cream recipe. In fact, it's so easy, it's not really a recipe, it's merely a lazy blend. Enjoy!
Ingredients:
- a cup of frozen fruit of your choice (I'd recommend berries, banana, mango - you could even try a mixture of fruits)
- 1/2 teaspoon of vanilla bean paste
Method:
1. Whizz ingredients in a food processor until all ingredients are combined (make sure you don't over blend the ingredients or else it may become too runny)

This is a frozen banana & strawberry parfait
