Chia Wholemeal Pancakes
Vegan pancakes have become one of my recent discoveries. I never knew vegan pancakes existed, and wasn't sure if I would actually like them. But oh my, ever since I created my first batch of vegan pancakes, they have been one of my fave breakfast foods! They're the perfect comfort food and so simple to make too! This batch of pancakes were so light and fluffy and was the perfect pick me up for a busy day. When you're in the mood for pancakes, I'd definitely suggest giving this recipe a try!
Ingredients:
- 2/3 cup self-raising flour
- 1 mashed banana
- ¼ teaspoon of vanilla bean paste
- 2 tbsp chia seeds
- ¾ cup of almond milk
- 1 tbsp oil (for frying)
Method:
1. Stir all the ingredients in a bowl, making sure that all the ingredients are well combined.
2. Heat a pan on low heat and add oil. Add about one third of the mixture to the pan and cook until all the bubbles have popped (this usually takes about 2 minutes) then flip pancake on other side and cook for about 2 minutes. Repeat this for the rest of the mixture.
Tip: These pancakes do not take that long to cook, so make sure the heat is low so it can cook throughout and if you’re not sure when to flip, just used a spatula to check (it should be slightly brown in colour). Enjoy!
