Berry & Coconut Overnight Oat Parfait

Ingredients:
For the cocoa overnight oats:
- 1/4 cup oats
- 1/2 cup almond milk (or any milk of your preferred choice)
- sprinkle of cinnamon
- 1/4 teaspoon vanilla bean paste
- 1 tbsp of cocoa or cacao
- 1 tbsp chia seeds
For the berry overnight oats:
- 1/4 cup oats
- 1/2 cup almond milk (or any milk of your preferred choice)
- sprinkle of cinnamon
- 1/4 teaspoon vanilla bean paste
- handful of frozen or fresh berries
- 1 tbsp chia seeds
Optional: additional fruit (like mango, banana, goji berries), raw nuts, shredded coconut, chia seeds etc for the toppings - the topping options are endless!
Method:
1. The night before:
To make the cocoa overnight oats, place all ingredients in a jar or bowl and mix well.
To make the berry overnight oats, place all ingredients-except for the berries in another jar/bowl and mix well.
Place both mixtures in fridge and leave overnight.
2. In the morning: if the mixtures are too dry in the morning, add more milk.
Mash the berries (if you're using frozen berries, place in microwave for about a minute) and mix it together with the berry overnight oat mixture.
3. To make the parfait: you can start off with any overnight oat mixture, in the picture above, I started of with the cocoa overnight oat mixture.
Place about 3 tablespoons of the mixture of your choice (this will be the bottom layer) into a jar, making sure the mixture is spread evenly on the bottom and the sides of the jar. Repeat this step with the about 3 tablespoons of next overnight oat mixture.
Keep on repeating step 3 until all the of overnight oat mixtures has been added to the parfait. Enjoy!
Optional: you could top off your parfait with additional fruit (like mango, banana, goji berries), raw nuts, shredded coconut, chia seeds etc for the toppings - the topping options are endless!
