Sometimes, a good ol' burrito can do no wrong! I'm a big fan of mexican food - nachos, burritos, tacos, the list goes on. But, there is a way to enjoy Mexican food in a much healthier light. So after looking at some burrito recipes online for inspiration, I decided to have a go and make my own vegan burritos. Amen to the inventor of sushi. If sushi weren't in my life, I seriously would be completely lost, blissfully unaware of this concept we call life. You have no idea how joyously over the moon I was when I managed to make sushi- and somehow, it turned out to be success. Sadly, it took me a long time to actually perfect rolling the nori wraps- you would not believe how long it took me, haha! Nonetheless, I finally got it right, and I've decided to share the recipe with all of you lovely people!
