Penne Pasta with Vegetables & Tomato Sauce
To be frank, a classic bowl of pasta can do no wrong! I was having pasta cravings the other day and this happened. I guess the best recipes to make are the ones where I just experiment and see if it tastes good- and that is exactly how this pasta recipe came about. It was pretty much a successful result of yet another one of my cooking adventures. And oh my, it was so good! This is best served when you're in the mood for a heart meal and I'm pretty sure that pasta can never go astray!
Serves 4-5
Ingredients:
- 2 cans of 400g of peeled tomatoes
- ½ cup roughly chopped basil
- ½ red onion, diced
-1 clove garlic, finely chopped
- 500g wholemeal penne pasta
- sprinkle of pepper
- sprinkle of mixed herbs
- sprinkle of salt
- 3 tablespoons of olive oil
- 1 tablespoon of coriander, chopped
Method:
1. Cook the pasta according to the packet instructions.
2. Meanwhile, heat a tablespoon of olive to pan and add onion and garlic and stir for a few minutes until the onion begins to soften.
2. Reduce heat to low and add broccoli and carrot and cover for a few minutes.
3. Once the broccoli and carrot has become softer, add tomato, basil, mixed herbs, coriander, sprinkle of salt and pepper and reduce to a simmer and cover for 10 mins.
4. Just before serving stir in the pasta with the pasta sauce. Enjoy!
