Minestrone
One of the best things about the winter weather is having comfort food which is so nourishing and just warms up your whole body. As much as I love the summer weather, my fave foods to eat are wintery meals- soups, stews, curries, the list is endless! This soup just filled up my whole body with warmth and was just so delicious! This was a minestrone recipe I made the other day, it was so simple to make and of course so comforting!
Ingredients:
-2 carrots, chopped
- 3 celery stalks, chopped
- handful of fresh oregano, finely chopped
- handful of basil, finely chopped
- 4 cups vegetable stock
- 1 red onion, diced
- 2 cloves garlic, finely chopped
- 2 cups of uncooked pasta
- a cup of green beans, chopped
- 3 tomatoes, diced
-salt
- pepper
- tablespoon of olive oil
Method:
1. Cook pasta following the instructions on the packet
2. Heat olive oil in a pan on medium heat and add onion and garlic and sauté for about a min until onion begins to soften
3. Then add all vegetables and stir until they soften
4. Add vegetable stock, oregano and basil, cover, reduce heat and let it sit for 5 min
5. Then add pasta, stir and let it sit for 5 mins.
6. Season with salt and pepper. Enjoy!
