Coconut Lemon Bliss Balls
Bliss balls are one of my favourite snack combos as they give me a healthy boost of energy during the day. They are packed with protein and fibre and are a much healthier alternative when you crave something sweet. When I made this recipe, I remember as a kid I loved a classic lemon and coconut slice and although my view of food has changed, and I'm not much of a fan of slices anymore (sorry to all the cake lovers out there), these bliss balls took me back to all those fond memories of enlightenment I had from eating a delectably sweet bakery treat. And oh my, they were delicious!
Ingredients:
- 1 raw cup mixed nuts
- 2-3 tbsp lemon juice
- 1 tablespoon chia seeds
- 2 tablespoons water
- 8 pitted dates
- ½ cup coconut flakes
Method:
1. Whizz all ingredients in a food processer for a few minutes until it is well combined and it is no longer crumbly2. Take about a tablespoon of the mixture and roll and shape it into a ball shape. Repeat this until all the mixture has been used.
3. If there is any coconut flakes left, you can sprinkle and rolls the bliss balls in coconut flakes to coat them.
4. Place the bliss balls in the fridge for at least an hour. Enjoy!
