The Lowdown on Baobab
Check out my latest superfood obsession - Baobab. Pronounced BEY-oh-Bab, it's comes from a fruit tree in Africa and for many, many years it's been used for medicine and in food as it's super good for you!
So why is this bow-oh-watchamacallit so good for you?
It has so many health benefits as it's perfect for skin health, your digestive and immune system and gives you heaps of energy! This because it's high in fibre, antioxidants, vitamin C, alkanising minerals and so much more! Need i go on? Clearly, Baobab is a superfood powerhouse which is insanely awesome for you and you should totes consider giving a try! It's definitely the perfect way to give you that nutrient kick!I It's been described having a similar taste of caramel pear with a bit of grapefruit and OH MAH GOODNESS it goes so well with just about anything! Was absolutely thrilled when I received this in the mail and I got my baobab from the lovely team at Rawsome foods!

Check out the yummy Baobab dark choc cookies I made...
Serving size: about 12 cookies
Ingredients:
- 1 cup cashews
- 180g pecans
- 12 pitted dates
- 2 tbsp Baobab
- 2 tbsp coconut oil
- 2 tbsp maple syrup
- 2 tbsp water
- 3 tbsp cocoa nibs - if you don't have these at home you can use chocolate cut into small pieces instead
- sprinkle of cinnamon
Method:
1. Add all ingredients except for the cocoa nibs into a food processor and blend on high for about 5 mins or until the mixture is able to stick together.
2. Place the mixture in a bowl and stir in cocoa nibs.
3. Place the mixture on a flat surface (I used the bottom of a baking tray), making sure the mixture is spread evenly.
4. Using a cookie cutter or the top part of a cup/jar, press firmly into the mixture so a circle forms. Repeat this step until all the mixture has been used up.
5. Place the cookies in the fridge for at least an hour. Enjoy!
