Vegan Burrito
To be frank, I love a good burrito, but of course, me being a health-obsessed foodie, I try to make everything as healthy as possible. So, after looking at some other burrito recipes online for inspiration, I made a yummy batch of vegan burritos and oh my, they tasted ah-mazing and it was so simple to make too!
Ingredients:
- 1 can of mixed beans, rinsed and drained
- 1 cup of sweet potato, peeled and cubed
- ½ a red onion, diced
- 1 tomato, chopped
- 1 teaspoon cumin
- a handful of coriander, chopped
- salt
- pepper
- 3 wholemeal tortilla wraps (you could even use wholemeal wraps or Lebanese bread)
- vegetable oil
Additional toppings:
- 2 avocados
- salsa
Method:
1. Heat oil in a pan and sauté onion for about a minute. Once onion has browned, add tomato. Stir until tomato has softened.
2. Then add the sweet potato and cumin and cover for a few minutes until the sweet potato has softened.
3. After the sweet potato has softened, add the mixed beans and coriander and a sprinkle of salt and pepper to the pan and stir. Once all ingredients are combined, cover for 2 mins and remove from heat
4. To make the burrito, place some of the burrito mixture on a tortilla and top with avocado and salsa. Repeat for the other tortilla wraps. Enjoy!

I also love making deconstructed burrito bowls- which is pretty much the same ingredients but separated and placed in a bowl. It makes the burrito so much easier to eat and avoids the absolute burrito mess which occurs whenever burritos are eaten (or is it just me who can't eat burritos in a neat manner?)
