Summer Lunch Ideas
So you’re probably thinking “About time we had something food related here, after all, you are FOODbloggerandrea… !" I know I know please don't throw shade.... The lack of foodie related posts has been due to that fact that my meals as of late have been repetitive and consisting of falafels & nice cream. But they’ll be more food related posts coming soon, but in the mean time, here a list of some easy summer recipes, to help your through the blistering heat with minimal effort…
Take note: the ingredient measurements aren't specific and different quantities won't affect the dish. Besides, when it's too hot, who has time to measure anyway?

Stir Fry
not your typical summer food but in the words of mum "it's a summer food because it's crispy" so if she says so, than it's a summer food...
What you need:
- any veggies you have on hand, chopped - the photo above has carrots, capsicum, snow peas, sweet corn, broccoli and mushroom
- 1-2 tbsp of coconut oil or olive oil
- 1 tbsp soy sauce
- sweet chilli
- optional: rice to serve
Method:
1. Heat oil in a pan and add veggies and soy sauce.
2. Stir until the veggies are crispy (this usually takes about 10 mins).
3. Take off heat, top with sweet chilli and serve with rice. Enjoy!

Veggie Wraps
I reckon wraps are underrated. With the right filling and sauce, a wrap can be extraordinary.
What you need:
- wholemeal wraps
- for the filling: any veggies you have on hand - this wrap features chick peas, leafy greens, capsicum, cucumber and carrot
- sweet chili
Method:
1. I guess it's self explanatory, but all you have to do is place the filling in each wrap and serve. Enjoy!

Rainbow Bowl
When it comes to food, the more colour the better. Make a homemade edible rainbow by making a rainbow bowl! Get creative, the rainbow bowl combos are endless!
What you need:
- add veggies/fruit you have on hand - this bowl features carrot, corn, avocado, chickpeas, cucumber and a salad.
- veggie burger
- grain of your choice - this one features rice but you could add quinoa/amaranth/wild rice etc depending on what you have
- topping of your choice: sweet chili or tahini or balsamic vinegar etc (this bowl was topped with sweet chilli after the photo was taken.
Method:
1. Add all veggies and grains to a bowl and top with topping of your choice. Enjoy!

Summer Salad
No summer lunch list would be complete without a salad. perfect on it's own or as a compliment for something else, they're the perfect way to cool off!
